Baked Mont d’Or with potatoes

Baked Mont d'Or with potatoes is a winter dish for 4 people, ready in 35 minutes, very easy to make, for about €3.40 per person. The trick is poking the cheese before pouring in white wine, so it melts all the way through. You eat it with a spoon, dipping hot potatoes straight into the box.

Tonight, we're baking a whole Mont d'Or and eating it with a spoon, with hot potatoes for dipping.

Baked Mont d'Or is that moment when the whole family leans over a wooden box and dips a potato into cheese that's gone completely runny. The washed rind keeps its earthy, woodsy flavor, the center turns almost liquid in the oven's heat, and the white wine adds a sharp edge that wakes everything up. The sliced garlic flavors it quietly, without ever taking over.

This is a winter weeknight dish, the one you pull out when it's dark by 6pm and you want to warm up without spending an hour at the stove. Kids love dunking their potatoes in it, and the pickles bring the crunch that would otherwise be missing. Mon Chou saves it for nights when you want a dinner that brings everyone to the table, with barely any dishes to wash.

The step by step recipe

  1. Preheat the oven to 200°C and cook the potatoes with their skins on in salted water. 20 min

Choose firm fleshed potatoes, they won't fall apart when you dip them.

  2. Remove the lid from the Mont d'Or, put the cheese back in its box, and poke it with the garlic cloves sliced into slivers.

Wrap the sides of the box in foil if it's made of thin wood.

  3. Pour the white wine over the cheese and bake the box on a baking sheet. 20 min

Set the box on a baking sheet, the cheese can bubble over while cooking.

  4. Wash and dry the salad, then dress it with the vinaigrette.

Dry it well, a damp salad waters down the vinaigrette.

  5. Take the Mont d'Or out, open the top, and serve it with the peeled potatoes and pickles.

Dip a few potatoes into the center first, that's the best part.

Our tips to get it right

  • Take the Mont d'Or out of the fridge a good half hour before baking, it'll heat up more gently and melt more evenly.
  • If the wooden box looks flimsy or has lost its staples, set it inside a small ovenproof dish to catch any overflow.
  • Set aside a few smaller potatoes, they cook faster and let you check doneness without poking into all the big ones.

The variations

  • Swap the white wine for dry hard cider, a common twist in eastern France that adds a fruity note to the cheese.
  • Scatter a few cooked bacon bits on top before baking for a heartier version on a bigger appetite night.
  • For kids who don't like garlic, pull the slices out right before serving, the flavor stays in the cheese without any bits to bite into.

What to serve it with

  • A well dressed green salad
  • Toasted country bread
  • A glass of the same white wine

Storage

Baked Mont d'Or doesn't keep well once cooked, it's best eaten right away while it's still runny. If you have leftovers, cover the box and refrigerate for 1 day at most, then reheat gently in the oven rather than the microwave so it melts properly again.

Questions about this dish

Can you prepare baked Mont d'Or ahead of time?

You can peel the potatoes and make the salad ahead, but the cheese needs to bake right before serving. It loses its gooey texture if it cools down and gets reheated.

Do you need to remove the rind before baking?

No, the rind stays on, it holds the cheese together while it bakes and keeps it from spilling everywhere. You only remove the paper and the wooden lid on top.

What white wine works best for this recipe?

A dry white wine from the same region, like a Jura wine, pairs naturally with Mont d'Or. Any dry white wine you'd normally cook with also works fine.

Can you bake Mont d'Or without its wooden box?

Yes, in a small buttered baking dish, though the wooden box adds a slight smoky note and helps the cheese hold its shape. Without the box, keep a closer eye on it while it bakes.

How long does it take to make a baked Mont d'Or with potatoes?

Count 35 min in total, prep and cooking included. The recipe is rated “very easy”.

How many calories are in a baked Mont d'Or with potatoes?

How much does a baked Mont d'Or with potatoes cost?

About €3.40 per serving, or €13.60 for 4 people, based on average supermarket prices.
