Baked fish plaki with tomatoes and potatoes
Baked fish plaki is a Greek dish of cod baked on a bed of tomatoes, onions and potatoes. It serves 4, takes 1 hour, is easy to make, and costs about €3.50 per person. The key is baking the vegetables alone first, then adding the fish only for the last 15 minutes so it stays tender.

Fish plaki is a Greek everyday dish that cooks all in one baking dish. The potatoes soften in the tomato juices, the onions turn mellow as they bake, and the cod goes in at the very end to stay moist. Garlic, parsley and lemon do all the flavoring, no separate sauce needed.
It's a great choice for a weeknight when you want a full meal without spending the whole evening on it, or for a relaxed Sunday with the family. Kids tend to like cod, since it's mild and boneless once filleted, resting on vegetables that have lost their sharpness in the oven. The dish goes straight from oven to table, which makes serving and cleanup easier.

The step by step recipe
-
Slice the potatoes into thin rounds, cut the onions into half moons and the tomatoes into wedges.
Keep the potatoes thin so they cook in the same time as the fish.
-
Spread them in a baking dish, add the garlic, parsley, oil, salt and pepper, and toss.
Toss with your hands to coat every slice evenly.
-
Bake at 200°C, covered with parchment paper, until the potatoes start to soften. 25 min
The parchment traps moisture, without it the vegetables dry out.
-
Salt the fillets, lay them over the vegetables, drizzle with lemon juice and bake again. 15 min
Don't overcook, the fish will flake apart.
-
Take the dish out, scatter with parsley and serve straight from the baking dish.
Spoon the juices from the bottom of the dish over the fish before serving.
Our tips to get it right
- Pick a firm, waxy potato, it holds up better through the long bake without falling apart in the juices.
- Drain the tomatoes briefly if they're very juicy, so the dish doesn't end up watery at the bottom.
- Check the fish by flaking the center of a fillet with a fork, it should come apart easily without looking dry.
The variations
- Swap the cod for haddock or monkfish, both hold up well to oven baking.
- For a vegetarian version, replace the fish with grilled eggplant slices laid over the vegetables for the last 15 minutes.
- To save time, slice the potatoes even thinner and cut the first bake down to 15 minutes.
What to serve it with
- Crusty bread to soak up the juices
- A lemony green salad
- A glass of dry white wine
Storage
Fish plaki keeps for 2 days in the fridge in a sealed container. It doesn't freeze well, the fish loses its texture once thawed. Reheat it gently in the oven or in a pan over low heat so the fish doesn't dry out.
Questions about this dish
Can you make fish plaki ahead of time?
You can slice the vegetables and season them in the baking dish several hours ahead. Bake only when you're ready to eat, so the fish still gets its short 15 minute cooking time at the end.
What fish works well instead of cod?
Haddock, pollock or monkfish all work well, since they're firm enough to hold up in the oven. Skip very thin fillets, they'd dry out in 15 minutes.
Why cover the dish with parchment paper at the start?
The parchment traps moisture while the potatoes cook on their own. Without it, the vegetables would dry out before the fish even goes in.
Do kids usually like this dish?
Yes, cod is mild and boneless once filleted, and the tomatoes lose their acidity as they bake. You can set aside a portion of vegetables before adding more pepper if your kids are sensitive to it.
