Under the golden emmental crust, the yolk stays runny and mixes with the thick cream and melted ham at the bottom of the ramekin. The water bath makes all the difference, it cooks the white gently without ever setting the yolk. You dip the toasted soldiers in, and every bite alternates crunchy bread with soft egg.

This is the kind of dish that saves a busy weeknight with almost no effort, but it also feels special on a Sunday evening with family. Kids love cracking the crust and dipping their bread, while adults appreciate how simple it is for a result that looks far more polished. Mon Chou suggests it for nights when you want something quick without giving up comfort.

The step by step recipe

  1. Preheat the oven to 180°C and butter four ramekins.

Butter the edges well, so the eggs release easily if needed.

  2. Place a piece of ham and a spoonful of cream at the bottom of each ramekin.

Season the cream lightly with salt, the egg white won't get enough on its own.

  3. Crack two eggs into each ramekin, season with salt and pepper, and sprinkle with emmental.

Crack each egg into a cup first, so the yolks stay whole.

  4. Place the ramekins in a dish filled with hot water halfway up the sides and bake. 12 min

Take them out when the white looks milky and the yolk is still wobbly.

  5. Toast the buttered bread, cut it into soldiers, and serve with the chives and seasoned salad. 5 min

Rub a garlic clove on the warm toast for extra flavor.

Our tips to get it right

  • Use ramekins with high sides so the water bath never reaches the rim near the egg.
  • Pull the ramekins out as soon as the white turns opaque, they keep cooking a little more after leaving the oven.
  • Pick a thick cream rather than a liquid one, it stays put at the bottom of the ramekin instead of mixing too quickly with the eggs.

The variations

  • Swap the ham for crispy bacon bits for a heartier version.
  • For a vegetarian version, skip the ham and add some cooked spinach or sautéed mushrooms at the bottom of the ramekin.
  • To save time, skip the emmental topping and serve straight out of the oven, kids are happy with that too.

What to serve it with

  • A lemony green salad
  • A light broth to start
  • Tea or sparkling water

Storage

Baked eggs are best eaten right away, a runny yolk doesn't keep well. If needed, store leftovers in the fridge in a sealed container for up to 1 day, and reheat gently in the oven, knowing the yolk won't stay runny.

Questions about this dish

Can you make baked eggs ahead of time?

You can prep the base with ham, cream and emmental ahead of time and keep it in the fridge. Crack the eggs only right before baking, to keep the yolk nice and runny.

How do you know when baked eggs are done?

The white should look milky and set, while the yolk should still wobble slightly in the center. If you gently shake the ramekin, the yolk should move like soft jelly.

Can you bake these eggs without a water bath?

It's possible, but a water bath is still the best way to get gentle, even cooking. Without it, the white may cook too fast on top while the center stays cold.

What bread works best for the toast soldiers?

Country bread is ideal because it holds up well in the oven and stays crunchy once toasted. A slightly stale baguette also works really well.
