Baked Camembert with potatoes and salad

Baked Camembert is a whole cheese roasted in its box with garlic and thyme, served with potatoes and salad for 4 people. It takes 40 minutes, counts as very easy, and costs about €3.00 per person. The key is choosing a raw milk Camembert that keeps its flavor when baked.

Tonight, a whole Camembert baked with garlic and thyme, scooped straight from the box with potatoes.

Under the golden rind, the Camembert turns into a warm, creamy pool you cut open to watch it spill out. Sliced garlic and thyme gently flavor the cheese as it bakes, while the white wine keeps the rind from drying out. The boiled potatoes, still warm, are made for dipping right into the melted center, and the salad adds just enough freshness to balance the richness.

This is a dinner for nights when you don't want to spend long in the kitchen but still want something everyone enjoys together. Kids love dunking their potatoes into the melted cheese, and adults can add a few cornichons for a sharper bite. Mon Chou likes to bring this one out in fall and winter, when warm, shareable dishes feel right at the table.

The step by step recipe

  1. Preheat the oven to 200°C and wash the potatoes without peeling them.

Scrub them under water, the thin skin is delicious.

  2. Boil the potatoes in salted water, then drain them. 20 min

Start from cold water for even cooking.

  3. Put each Camembert back in its box, poke it with sliced garlic and thyme, then drizzle with white wine.

A few knife tip pricks on top help the wine soak in.

  4. Bake the Camembert in their boxes until the center turns nicely runny. 15 min

Set the box on a baking sheet, it can overflow.

  5. Toss the salad with the vinaigrette and serve everything together, with the potatoes ready for dipping into the cheese.

Cut open the top of the Camembert with a knife to release the runny center.

Our tips to get it right

  • Let the Camembert sit at room temperature for 15 minutes before baking, it cooks more evenly that way.
  • Choose waxy potatoes, like fingerlings or new potatoes, they hold their shape and are easy to dip.
  • If the rind browns too fast, cover the Camembert with foil for the last few minutes of baking.

The variations

  • Swap the white wine for a splash of cider for a softer, slightly tangy flavor.
  • Drizzle honey or scatter crushed walnuts over the Camembert before baking for a sweet and salty touch.
  • For kids, skip the raw garlic and use only thyme, the flavor stays milder.

What to serve it with

  • A glass of dry cider
  • Grilled country bread
  • A walnut and lamb's lettuce salad

Storage

Baked Camembert doesn't keep well once cooled, it's best eaten the same day. Cooked potatoes keep for 2 days in the fridge in a sealed container and reheat well in a pan or oven. The cheese shouldn't be frozen after baking.

Questions about this dish

Can I use a different cheese instead of Camembert?

Yes, Brie or Reblochon work just as well since they melt the same way. Keep a wooden box or use a small baking dish if you don't have one.

Should I remove the rind before baking the Camembert?

No, the rind holds the cheese together and keeps the creamy center inside while it bakes. You simply cut it open with a knife once it comes out of the oven.

Can I cook the potatoes ahead of time?

Yes, you can boil them a few hours ahead and reheat them quickly in a pan just before serving. They soften right back up without any issue.

Is the white wine necessary?

It flavors the cheese and keeps it from drying out, but you can swap it for a bit of vegetable broth for an alcohol free version. The result stays just as creamy.
