Churros come out hot, golden and crisp outside, soft inside, and the cinnamon sugar coating cracks with every bite. The chocolate sauce, thick and glossy, is there for dipping each stick down to the last piece. It's a dessert that brings energy to the table, perfect for a winter dinner with friends or a birthday treat that breaks from the usual cake.

Serve them piled on a platter in the middle of the table, with everyone diving into the shared sauce. Kids and adults both go for them, and they close out a hearty meal without feeling heavy. Pair them with coffee or hot chocolate and the evening ends on a good note for everyone.

The recipe, moment by moment

The same dayDuring the day, whenever you get a moment.

  1. Heat the cream and milk, pour them over the chopped chocolate and stir until you get a smooth sauce.

Let the chocolate sit for a minute before stirring, the sauce turns out glossier.

Before the guests arriveThe last hour, right before the doorbell rings.

  1. Bring the water to a boil with the salt and olive oil, pour in all the flour at once and stir vigorously until the dough pulls away from the sides.

Stir fast off the heat, the dough should form a smooth ball with no lumps.

  2. Put the dough in a piping bag fitted with a star tip and let it cool slightly, then mix the sugar and cinnamon in a shallow dish.

Use a large star tip, the ridges make the churros crispier.

When it's time to serveThe final touches, right in front of your guests.

  1. Heat the oil to 180°C, pipe twelve centimeter sticks and fry them, turning as they cook. 4 min

Snip the dough with scissors right at the tip, and fry in small batches so the oil stays hot.

  2. Drain the churros on paper towels, roll them right away in the cinnamon sugar and serve with the warm chocolate sauce.

Roll them while hot, the sugar sticks better and won't melt.

Our tips to get it right

  • Weigh the flour before you start, it needs to go into the boiling water all at once, there's no time to measure mid-process.
  • Test the oil temperature with a small piece of dough, it should rise to the surface sizzling gently as soon as it hits the oil.
  • Keep the chocolate sauce warm over a water bath during serving, it thickens fast as it cools and gets harder to dip into.

The variations

  • Swap the dark chocolate for milk chocolate for a sweeter sauce that kids tend to prefer.
  • For a quicker version, make the chocolate sauce the day before and warm it gently right before serving.
  • Add a pinch of flaky sea salt to the chocolate sauce for a contrast that adults tend to enjoy.

What to serve it with

  • A strong coffee to finish the meal
  • Hot chocolate for the kids
  • Fresh fruit as a lighter side

Storage

The raw dough doesn't keep, fry it the same day you make it. Fried churros are best eaten within the hour, they lose their crunch as they cool. The chocolate sauce keeps for 2 days in the fridge in a sealed container and reheats gently over a water bath.

Questions about this recipe

Can you make churros without a piping bag?

A disposable bag with the corner snipped at an angle works just as well. What matters is having a star or ridged opening so the churros cook evenly and keep their signature shape.

How do you know when the oil is at the right temperature?

Without a thermometer, drop in a small piece of dough, it should rise right away sizzling gently. If the oil is smoking, it's too hot and will burn the outside before the inside cooks through.

Can churros be made for a bigger group?

The recipe doubles easily, but always fry in small batches so the oil doesn't cool down. Plan on two rounds of frying rather than one large batch.

Why does my churro dough turn out too soft when frying?

It likely cooled too long before frying, or the boiling water wasn't hot enough when the flour went in. The dough should form a firm ball that pulls cleanly away from the sides of the pan.

Can churros with chocolate sauce be made ahead?

Partly, the finish happens at the last moment. The recipe needs 35 min of work in total, split up like this, the same day, 1 step, before the guests arrive, 2 steps, when it's time to serve, 2 steps.
